we're millers + we're bakers

Miller + Baker opened in late 2019, but the Miller+Baker story begin in 2014 in the Danish city of Copenhagen where we lived and worked in for 4 years, soaking up the atmosphere of the city and tasting our way around the incredible bakeries of northern Europe, with their dark crust sourdough, heavy rye and delicious pastries.

We didn't go to Copenhagen intending to one day open a bakery, but before returning to Perth, Mark staged in the bakeries of Brøflov, The Bread Station and with Richard Hart in the test bakery of Noma before the first Hart Bageri doors opened.

Back in Perth Mark tested the idea of a bakery in several locations, before the space on the corner of Lake and Edith. This is our old neighbourhood, we bought our first house in this neighbourhood, this location, the old Casa del Dolce, felt so familiar and so right.

Armed with a background in Environmental Science, Mark was determined to trace the origins of any flour used in the bakery. To that end he researched and purchased a stonemill from Vermont.

 

With the mill on it's way we went to work fitting out the bakery with a mix of secondhand equipment, borrowed furniture and a state-of-the-art Italian deck oven. Mark established connections with a network of Western Australian farmers, dedicated to improving soil biology, which supports the health of our customers and the future of our planet.

In particular Ian and Di Haggerty who have pioneered the "Natural Intelligence Farming". Instead of chemical fertilisers, pesticides and herbicides, the couple have adapted their seeding machines to spray a combination of worm juice and compost extract to coat the seeds, enrich the soil and boost the plants' immune system.

Throughout the years, our team of skilled artisans - pastry chefs, bakers, and baristas - has remained committed to delivering exceptional flavours using time-honoured methods. We take pride in harnessing the unique qualities of freshly milled flour sourced locally in Western Australia.

As a family-owned and operated bakery, we feel fortunate to live and work in one of Perth's most welcoming neighbourhoods. We cherish our loyal customers and are immensely grateful for their support.
